“What is this farro thing?”
Farro is a grain that’s been around forever; In fact, this Italian grain was believed to have sustained Roman legions during long marches to combat! When cooked, farro looks like barley but has a chewier texture. It’s for that great texture that we’ve selected it for a couple of our signature salads that we deliver to you.
Some fun facts:
Protein Rich: Each cup serving provides up to 20 grams of protein. When combined with legumes, it forms a complete protein. (Throw in chickpeas for a complete meal.)
Full of Nutrients: Farro is full of vitamins and minerals including Vitamin B, immune-boosting magnesium and Vitamin E.
Great Source Fiber: Each cup serving provides up to 7 grams of fiber
We’ve been asked how to prepare farro at home. Here are some tips from the kitchens of Farmer’s Fix!

There are a number of ways to prepare farro:
Stove-top ( 20 to 40 minutes simmering time)
Oven ( 30 to 45 minutes)
Slow cooker ( 2 to 3.5 hours)
However, Farro does not get mushy when overcooked, which gives you a lot more flexibility. Check out below for a fun and hearty farro recipe!

SIMPLE FARRO RECIPE WITH CREAM CHEESE AND SPINACH

This delicious farro recipe is a great side dish with almost any protein. It’s creamy and healthy, and delicious, too!

INGREDIENTS:

1 and 1/2 cups farro
4 cups water, stock or a mixture of both
salt
1 cup packed fresh spinach, chopped
3 Tbsp. cream cheese or 1/3 fat cream cheese
pepper

DIRECTIONS:

  1. Measure the farro into a fine mesh sieve and rinse with cold water. Drain. You can then cook the farro as you wish. The instructions here are for cooking on the stove.
  2. Move farro to a medium sized pot that has a lid. Add the water or stock and ¼ teaspoon salt. Bring to a boil over high heat.
    Reduce heat to low, cover and cook for 25-30 minutes, until it is softened but still chewy. If there is liquid remaining in the pot, drain it off or save it to add to a soup, stew or sauce.
  3. While the farro is still hot, stir in the spinach, cream cheese and a pinch of salt and of pepper. Taste. Add more salt and pepper to taste.
